The 1991 De Bortoli Noble One Botrytis Semillon is a rare and highly collectible Australian dessert wine from one of the country’s most celebrated sweet wine producers. Created by De Bortoli Wines, Noble One is widely regarded as Australia’s benchmark botrytised Semillon and has earned international acclaim for its richness, elegance, and remarkable ageing potential.

Produced in the renowned Riverina region of New South Wales, Noble One is crafted from carefully selected Semillon grapes affected by noble rot (Botrytis cinerea), a natural process that concentrates sugars, acidity, and flavour compounds. The 1991 vintage has now matured for more than three decades, developing extraordinary complexity while retaining the balance and freshness that define great Noble One releases.

The bouquet is intensely aromatic and beautifully evolved, offering layers of dried apricot, marmalade, honeycomb, candied orange peel, peach preserve, and fig. Extended bottle ageing has introduced additional notes of toffee, crème brûlée, roasted nuts, beeswax, caramel, and subtle spice, creating remarkable depth and sophistication.
