The 2020 Penfolds Bin 407 Cabernet Sauvignon is a structured, varietally pure expression of Australian Cabernet Sauvignon from the iconic house of Penfolds. Positioned as a mid-tier “Bin” wine, Bin 407 is designed to showcase Cabernet character with clarity, precision, and cellaring potential, drawing fruit from select premium vineyard regions across South Australia.

The 2020 vintage delivered wines of excellent concentration and balance, with Cabernet Sauvignon showing strong varietal definition, fine tannins, and lifted aromatics. The final blend is built from carefully selected parcels to ensure consistency, structure, and depth across regions.

Maturation typically takes place in French and American oak barriques (a proportion new), allowing the wine to develop complexity while retaining a strong fruit core and varietal identity.

The bouquet is classic and expressive, revealing layers of blackcurrant (cassis), dark cherry, and blackberry, supported by notes of cedar, tobacco leaf, bay leaf, eucalyptus, and subtle graphite minerality. With air, hints of dark chocolate, dried herbs, and spice emerge.

On the palate, the wine is medium to full-bodied, structured, and focused, delivering concentrated flavours of cassis, plum, black cherry, and dark berries. The tannins are firm yet refined, providing excellent backbone and ageing potential, while bright acidity keeps the wine fresh and balanced.

The finish is long and persistent, with lingering notes of blackcurrant, cedar, tobacco, spice, and subtle earthy complexity. While approachable in its youth, the 2020 Bin 407 is built for long-term cellaring and will evolve gracefully over 10–20+ years, developing additional savoury depth and complexity.
