It was fermented using natural yeast in French oak barrels, 22% new oak, with a small portion fermented in stainless steel tanks.\u003cbr\u003eBrilliant pale straw colour with a greenish glimmer to the edges and a watery hue. Flashy white peach, pear and dried honey scents sail through the nostrils trailed by some cashew, biscuity nougat and spice notes. Generously fleshed white peach, nectarine and dried honey flavours are delivered with ample concentration and textural volume. Layered across the back half are biscuity nougat, citrus and delicate spicy cashew elements.
