The 2025 Ashton Hills Piccadilly Valley Pinot Noir is a benchmark cool-climate Pinot Noir from the celebrated Piccadilly Valley in the Adelaide Hills. Produced by Ashton Hills, one of Australia’s most respected Pinot Noir specialists, this wine is crafted from a selection of estate-managed and grower vineyards that share a commitment to quality and site expression. The result is a Pinot Noir that combines purity of fruit, aromatic complexity, and the fine tannin structure that has become a hallmark of the Ashton Hills style.

The 2025 vintage was one of the earliest on record in the Adelaide Hills, with a warm and dry growing season promoting early ripening and excellent fruit concentration. Grapes were hand-picked and fermented in small open fermenters, with approximately 15% whole bunches included to enhance aromatics and structure. Indigenous yeasts were used for fermentation, and the wine was matured for nine months in seasoned French oak barriques and puncheons to preserve freshness and vineyard character.

The bouquet is vibrant and expressive, revealing aromas of red cherry, strawberry, raspberry compote, and violet, complemented by lifted floral notes, subtle spice, and hints of forest floor and undergrowth complexity. Whole bunch fermentation contributes delicate notes of green pepper spice, clove, and savoury nuances.

On the palate, the wine is silky, energetic, and beautifully balanced. Layers of strawberry, dark cherry, raspberry, plum, and cranberry are supported by bright natural acidity and fine-grained tannins. Subtle earthy notes, gentle spice, and delicate oak integration add complexity while maintaining the wine’s purity and elegance.

The finish is long, refined, and persistent, with lingering notes of red fruits, spice, autumn leaves, and savoury earthiness. Approachable upon release, the wine also possesses the balance and structure to develop further complexity over the next five to seven years.
