The D’ Soumah Blanc de Blanc Sparkling is a refined cool-climate sparkling wine crafted from 100% Chardonnay, produced by the respected Yarra Valley winery Soumah Wines. Made in the traditional method, this Blanc de Blanc highlights precision, elegance, and purity, showcasing the vibrant natural acidity and fine structure of high-quality Yarra Valley Chardonnay.

Sourced from select cool-climate vineyard sites, the fruit is hand-picked early to preserve freshness and delicacy. After gentle pressing, the base wine undergoes primary fermentation followed by secondary fermentation in bottle, where it is aged on lees to develop fine texture, complexity, and a persistent mousse.

The bouquet is fresh and expressive, offering aromas of lemon zest, green apple, white peach, citrus blossom, and subtle brioche. Underlying notes of almond, pastry dough, and wet stone add depth and sophistication.

On the palate, the wine is crisp, linear, and finely structured. Flavours of citrus, green pear, grapefruit, and stone fruit are supported by bright acidity and a creamy, fine bead. Lees ageing contributes subtle autolytic complexity, enhancing texture without compromising freshness.

The finish is long, clean, and refreshing, with lingering citrus, orchard fruit, and delicate brioche notes. Elegant and versatile, this sparkling wine is ideal as an aperitif or paired with seafood, light starters, and celebratory occasions.
