Beyond the Ordinary:
The 2008 vintage stands as a testament to Ponsot's meticulous dedication. Hand-harvested grapes, kissed by the sun and cradled in wicker baskets, arrive at the winery untainted and whole.
Minimal intervention reigns supreme at Domaine Ponsot. Racking is rare, fining and filtering absent. They believe minimal sulfites (used initially) and used oak barrels allow the Grand Cru terroir to shine through. Wines spend two years in these barrels, showcasing delicate aging, not overpowering oak. Their motto:" We produce WINE and not wine- and oak-based drinks," celebrating the pure expression of Pinot Noir and its unique Burgundian character.
A Tapestry of Earth and Fruit:
From the glass emerges a vibrant ruby robe, hinting at the wine's hidden depths. Aromas of ripe dark cherry, earthy spice, and a touch of floral elegance intermingle, captivating the senses. On the palate, the wine explodes with energy �a symphony of blackcurrant, raspberry, and plum balanced by a backbone of mineral-infused tannins.
