With 7% Merlot, this wine was open-fermented with 25 days on skins and matured for 12 months in 30% new French barriques. Initially cedary and leafy on the nose, redcurrant and black fruit emerge as it opens. A classic Yarra Cabernet structure, it will benefit from cellar aging.

Bright aromas of violets, cassis, plums, and mulberries with fresh chocolate/cedar oak and minty dried herbs. Medium-bodied and stylish, with vibrant dark fruit, creamy vanilla oak, faintly drying tannins, and slightly green-edged acids. This wine will develop elegantly over time.

Spicy with red ripe currant, hints of pepper, and charcoal. Medium-bodied with juicy fruit, refined with satin-like tannins, elegant and agile. Best to try in 2022.

Tasting Notes:

This Yarra Valley Cabernet Sauvignon is a classic, tightly wound when young, benefiting from decanting and five years of bottle age. It features red berries, cassis, subtle leafy and cedar notes, a well-balanced palate with fine tannins, lingering acidity, and flavor.

Winemaking:

Hand-picked fruit, meticulously sorted, and fermented in small open fermenters. Plunged twice daily, left 'on skins' for 25 days, and matured in premium oak barriques for 12 months before bottling in June 2020.
