Tasting Notes: This Riesling presents a delightful, candied aroma with hints of spearmint jubes and lemon drops. It boasts a pale green-gold hue and offers a juicy, yet clean and vibrant profile with a crisp, refreshing finish.
Winemakers' Notes: Following selective harvesting, the grapes are gently bag pressed and cold settled for 48 hours. After racking, the juice is fermented with neutral yeast at cool temperatures for about three weeks. Once fermentation is halted at the desired sugar level, the wine ages on lees for 6-8 weeks before bottling.
Vintage Notes: Southern Tasmania experienced a dry winter, with budburst beginning in mid-September. The spring and summer were marked by persistent wind and cold, leading to delayed shoot growth and a challenging flowering period. The result was open canopies and below-average yields, reducing vineyard labor compared to a typical season. The cooler year, combined with lower yields and open canopies, produced fruit with remarkable intensity and vibrant acidity.
