The 2023 Penfolds Bin 407 Cabernet Sauvignon is a benchmark multi-regional Australian Cabernet Sauvignon, crafted by Penfolds. First released in 1990, Bin 407 was developed to showcase the varietal purity, structure, and elegance of Cabernet Sauvignon while maintaining the distinctive Penfolds house style.

Sourced from premium vineyard regions across South Australia, including Coonawarra, McLaren Vale, Barossa Valley, Padthaway, and Wrattonbully, Bin 407 combines regional diversity with meticulous fruit selection to create a wine of depth, balance, and consistency. The 2023 vintage delivered fruit of excellent concentration, freshness, and varietal definition.

Following fermentation, the wine was matured in a combination of French and American oak barriques, with a proportion of new oak contributing structure, complexity, and refinement while preserving the wine’s vibrant fruit character.

The bouquet is classically Cabernet Sauvignon, displaying aromas of blackcurrant, cassis, blackberry, and dark plum, layered with notes of cedar, tobacco leaf, bay leaf, and dark chocolate. Subtle hints of mint, graphite, and baking spices add further complexity and regional character.

On the palate, the wine is medium to full-bodied, structured, and polished. Flavours of cassis, blackcurrant, blackberry, and plum are supported by fine-grained tannins and vibrant acidity. The integration of fruit, oak, and tannin is seamless, creating a wine that is both powerful and elegant.

The finish is long, focused, and persistent, with lingering notes of dark berries, cedar, cocoa, graphite, and spice. While approachable upon release, the wine possesses the balance and structure to reward cellaring over the next 10–15 years.
